You’ve probably heard since you were a child, breakfast is so important so I’ve also try to make an effort to eat the best breakfast I can.  Lately I’ve been opting for the grab and go. This Vegan Berry Coconut Parfait recipe is just that. Recently I tried SO Delicious coconut milk “yogurt”.   For this recipe I used the unsweetened vanilla which I must admit only is truly unsweetened if eaten alone. The fresh berries added the perfect amount of sweetness and the granola add an unexpected crunch.

Here are my initial thoughts on the “yogurt”:

  • If you opt to have the “yogurt” alone or with less sweet fruit I would definitely recommend putting a drizzle of 100% pure maple syrup or trying the blueberry, chocolate or passional mango flavors.
  • There are 0 grams of protein in this “yogurt” so I would definitely recommend add a little Vegan vanilla protein powder throughout the layers.

Makes about 4 mason jar servings*

 Ingredients:

  • Non-dairy yogurt- 1 and 1/2 cups
  • Granola – 1 and 1/2 cups  (my favorite is Kind)
  • Fresh berries – 1 and 1/2 cup
  • Vanilla protein powder

Ingredients to top (optional):

  • Shredded Cocount
  • Sliced Almonds
  • Drizzle of 100% maple syrup

Instructions:

  1. Slice fresh berries.
  2. Layer in the mason jars: 2 tablespoons of non-dairy “yogurt”, 2 tablespoons granola, and a palm full of fresh berries. Repeat layering to fill each jar.
  3. Get creative and design the toppings to your hearts content!
  4. Pour a bowl for a friend and enjoy!
