One of my favorite side dishes to make might just be this Watermelon Salsa. It’s easy to make and you get all the flavor minus the calories.
This Watermelon Salsa recipe is prefect for happy hour, a summer snack or holiday appetizer. You’ll love the mix of sweetness from the watermelon!
First step is dice, dice, dice. You’ll need to dice:
- 4 cups seedless watermelon (about half of a medium sized watermelon)
- 1 red onion
- 1 green bell pepper
If you’re looking for the perfect appliance to dice your veggies, I would recommend the Sharper Image’s 4-in-1 Chop and Slice. It’s easy to use, easy to clean up, chops veggies is various sizes and doesn’t take up a lot of space and will only cost you about $25 bucks. I picked mine up from Bed Bath and Beyond with a 20% coupon so it was a win-win.
Next, chop about 2/3 cup of cilantro. Once you have your veggies diced and cilantro chopped, the fun begins!
Add all ingredients in large bowl and toss until until combined. Enjoy! If you’re looking for a healthy chip alternative. Try cutting whole wheat tortillas into triangle and popping them in the over for 5-10 minutes. So easy and so crunchy! You’ll never want to buy tortilla chips again!
