I sure do love avocado. So I’m always thinking of ways to use avocado in my recipes. They taste delicious and have so many benefits its hard to overlook them. Plus being a southern gal I naturally love sweet potato.  So combining them both makes perfect sense, right? Yes, totally! This Avocado & Roasted Sweet Potato Cup recipe is AH-MAZINg and kind like a party in your mouth.  Enjoy!

Avocado & Roasted Sweet Potato Salad Cups

Makes about 4 cups

Ingredients:

  • 2 avocados
  • 1 medium sweet potato
  • 1 tomato
  • 2 tbsp olive oil
  • 6 sprigs of thyme
  • 1 tbsp minced shallot
  • 1/2 tsp Dijon mustard
  • 1/2 tbsp Sherry Vinegar
  • Salt and pepper, to taste
  • Fresh parsley, optional

Directions:

1. Heat over to 425F. Peel and dice 1 medium sweet potato, place in a bowl and toss with 1 Tbsp olive oil and 2-3 sprigs thyme.

2. Roast until potato is tender, about 12-15 minutes.

3. In a bowl whisk: 1 Tbsp olive oil, 1 Tbsp sherry vinegar, 1 tsp fresh thyme, 1 tsp minced shallot, and 1/2 tsp Dijon mustard.  Season with salt and pepper, to taste.

4. Toss warm potato with vinaigrette. Dice 1 tomato and set aside. Halve 2 avocados and scoop out about one-third of the insides of each half around the pit. Dice scooped insides and set aside.

5. Fill each half with sweet potato, diced tomato and diced avocado and top with fresh parsley.
