Really had a lot of fun making and love the taste of this Kiwi Mint Smoothie Bowl. As a kid kiwi I considered kiwi a dessert that you would it on its own but as an adult I’m so in love with mixing the sweetness with salty flavors and crunchy textures. This recipe is refreshing, has some sweetness and with two kiwis and coconut water so many benefits are packed into this little bowl!
Makes about 1 large serving (enough to share)
Ingredients:
- Spinach – 2 cups
- Kiwi’s – 2 peeled and sliced
- Banana (frozen is best)
- Orange – peeled
- Mint leaves – 3 to 4
- Coconut Water – 3/4 cup (my favorite coconut water is Bai Coconut Water)
- Chia Seeds
Ingredients to top:
- Granola (my favorite is Kind Snacks)
- Sliced Kiwi
- Shredded Coconut
- Sliced Almonds
- Chia Seeds
Instructions:
- Add ice, spinach, kiwi, orange, coconut water, mint and chia seeds to blender.
- Add additional spinach or coconut water as needed. More spinach to thicken the smoothie bowl or add more coconut water for a smoother smoothie, then blend again.
- Get creative and design the toppings to your hearts content!
- Pour a bowl for a friend and enjoy!
